raw vegan raspberry & blueberry cheesecake

INGREDIENTS: 

for the icing:
  • 1 cup of blueberries
  • 1 cup of raspberries
  • 250 grams of cashews
  • a handful of raisins
for the crust:
  • 500 grams of raisins
  • 1 cup of shredded coconut
  • 2 tablespoons of unsweetened cocoa powder


STEP 1: Soak the cashews with a handful of raisins in water for 5 hours.
STEP 2: Soak the raisins for 10 minutes, drain them, then blend them with the shredded coconut and cocoa powder.

STEP 3: Choose a cute dish, cover the bottom with shredded coconut, so the ooey-gooey crust doesn`t stick to it, then spread the crust.

STEP 4: Drain the cashews, separate the raisins.  

STEP 5: Blend the cashews with a handful of blueberries and a handful of raspberries.

   STEP 6: Spread the cashew cream on the crust.


STEP 7: Decorate it with shredded coconut and the left over berries.



STEP 8: ENJOY!!!!!
